Gout is a condition caused by the accumulation of sodium urate crystals in the joints. These crystals form when blood uric acid levels are high (hyperuricemia), often resulting in painful episodes of joint inflammation. Gout frequently affects the joints in the feet, particularly at the base of the big toe. However, it can affect other joints such as the ankles, knees, wrists, and elbows. It is more often seen in middle-aged men compared to women.

Normally, uric acid, a by-product of cell nucleic acid breakdown, is present in the blood in small amounts, as the body continually breaks down old cells and forms new ones. The body also transforms substances in food called purines into uric acid. Foods high in purines include anchovies, asparagus, herring, meat gravies and broths, mushrooms, mussels, all organ meats, sardines, and sweet breads. Most often, blood uric acid levels become abnormally high when the kidneys cannot eliminate enough uric acid in the urine. Excessive amounts of uric acid in the blood can result in urate crystals being formed and deposited in the joints. Combining a high-purine diet with alcohol can also worsen matters. Alcohol both increases the production of uric acid and interferes with its elimination by the kidneys.
