Zinc is an essential mineral that is a component of over 300 enzymes needed to repair wounds, maintain fertility in adults and growth in children, protein synthesis, help cells reproduce, preserve vision, boost immune function, and protect against free radicals, among many other functions. Zinc was recognized as an essential nutrient in 1934. Not until early 1960, however, was it known that low zinc intake or storage can cause deficiency symptoms. In recent years, zinc has received greater attention due to concerns that it is becoming less available in the soil and, consequently, in the food chain. Increased research has led to a much better understanding of this mineral. Zinc absorption may vary from about 20 to 40 percent of ingested zinc, depending mainly on body needs and stomach acid concentrations. Like iron, zinc from animal foods, where it is bound with proteins, is better absorbed. When bound with the phytates or oxalates found in grains and vegetables, less zinc is absorbed. Calcium, phosphorus, copper, iron, lead, and cadmium all compete with zinc absorption.

Copper is an essential trace element present in the organism and in food. It is needed to absorb and utilize iron. It is also part of the antioxidant enzyme, superoxide dismutase (SOD). This mineral is needed to make adenosine triphosphate (ATP), the energy the body runs on. Appropriate intake is important, as copper is toxic when consumed in excessive amounts. Copper has been added in small amounts since zinc reduces the body’s ability to utilize this essential mineral.
